Spring Hills Farm, located in the northeastern corner of Pennsylvania, is a family owned and operated farm committed to organic and sustainable agriculture.  Maple syrup is the main product we will offer at Headhouse Farmers' Market.

In late winter we tap the Sugar Maples on our farm and wait for the sap to flow.  A good thaw after a hard freeze causes sap to drip from the tap into the buckets and tubing networks.  The sap, only about 2% sugar, must be boiled down for maple syrup.  It takes 40 to 50 gallons of sap for one gallon of maple syrup.  We boil it down in a stainless steel evaporator over a roaring wood fire.  Every sugaring season family and friends converge on the farm to help.

2008 has been a great sugaring year for us and we're excited to offer our delicious maple products, including maple cream and candies, at Headhouse.  We also grow Christmas trees, available at the farm, and are building a flock of sheep.  We sell yarn from Jacob sheep, a heritage breed and have a wonderful team of draft horses which we use for wagon rides and jobs around the farm.  We welcome families to participate in farm stays, and host groups and workshops.  For more information susan.constantine@keystone.edu 570-563-2640
